When I was a child, one of the things I liked most was eating pasta dishes, macaroni and sausage, spaghetti with tomato or minced lasagna. Over the years, I learned to enjoy other ways of eating pasta, other sauces and other flavors. One of the first recipes that my son loved when he was little and now they have also discovered my nieces, was the recipe of tricolor pasta with red pesto and nuts, a recipe that both young and old like.

The red pesto, originating in Sicily It is a paste based on dried tomatoes, basil, cheese and pine nuts, a pesto or mortar-based sauce other than green pesto or Genovés pesto. Today we have adapted it by making a simpler version with nuts and in which we incorporate a bit of fried tomato sauce to adapt its flavor to children's palates and thus introduce them in this delicious sauce or pesto.   • 320 g of tricolor pasta, 4 dried tomatoes, 3 tablespoons of fried tomato, 60 g of peeled walnuts, 60 g of Parmesan cheese, 50 ml of olive oil, salt

How to make pesto tricolor pasta with nuts

We start by washing the basil, peeling the nuts and weighing or measuring all the ingredients with which we are going to prepare the pesto. Children can give us a hand and have a great time doing these tasks. Later, although we could do the pesto by crushing everything in the mortar, which is a very fun task to share a good time with family, it is more practical to use a hand mixer or a kitchen robot and make this sauce on a periquete.

Putting all the ingredients in the blender and giving a short and repeated "touches", we will have the pesto ready in a couple of minutes. It is good to store two or three walnuts in separate pieces to decorate the dish when finished cooking. To make our pasta dish, we cook the fusilli in plenty of water with a tablespoon of salt and let them cook during the time indicated by the manufacturer in the package minus two minutes.

Then we drain the pasta and pass it to a pan, where we add 4 tablespoons of the freshly made red pesto sauce and half a ladle of water from the pasta cooking. Let them integrate both, stir slightly during the two minutes the pasta was missing and we place it to serve it immediately.
